LEEK SOUP




Ingredients

Onion  (sliced)                   200gm
Leek                           200gm
Butter                                15gm
Mirepoix (white)               100gm
Chicken  stock                  1liter
Sachet d’ epices 1 nos
Salt and pepper                 to taste

Cooking of Method
  1. In a soup pot, sweat hard vegetables such as onion, leek and mirepoix in oil butter without browning.
  2. Add sachet d'epice. Add stock
  3. Simmer, skimming occasionally till the vegetables are tender.
  4. Season to taste.
