Ingredients
Onion (sliced) 200gm
Leek 200gm
Butter 15gm
Mirepoix (white) 100gm
Chicken stock 1liter
Sachet d’ epices 1 nos
Salt and pepper to taste
Cooking of Method
- In a soup pot, sweat hard vegetables such as onion, leek and mirepoix in oil butter without browning.
- Add sachet d'epice. Add stock
- Simmer, skimming occasionally till the vegetables are tender.
- Season to taste.
